Wuyi oolong is also called rock tea or stone tea, as the tea plants grow in mineral and rocky soils in the Wuyi Mountains.
This is an excellent Wu Yi Shan, subtle and finely aged, with more than 50% coming from rocky terrain and entirely charcoal roasted by hand.
Its cultivar name, Shui Xian, means daffodil, which indicates its delicate floral scent.
Tasting:
Notes: A mature and noble rock oolong with the unique character of the ancient Wu Yi Shan, typical warm toasted aromas, deep mineral notes and a touch of coniferous forest with hints of dark chocolate, clove and salted butter.
You can prepare it in a teapot, a gaiwan, or a similar vessel. The amount of leaves used will depend on the volume of the brew. We recommend approximately 3 to 4 grams per 100 ml, and infusing at 95°C.
Using water with low residue and chlorine promotes the infusion of the leaves.
We recommend steeping the leaves several times: 45 seconds for the first steep, and then reducing it to about 30 seconds for subsequent steeps.
