A private production tea from the 2000s, especially interesting for its degree of fermentation. Compared to teas from the 2010s or the currently produced, where shu cha is almost completely fermented, this tea has only been moderately fermented, leaving room for natural post-fermentation. Aged for twenty-five years, and well stored, it has developed characteristic ripening notes, with an aromatic universe which includes incense, nuts, and even vanilla bean. However, it does not have the malty or wet paper notes that are typical of many contemporary productions.

This brick immediately immerses us in the world of aged puerh. It was produced and fermented in the 2000s by a small unknown factory, then wrapped in simple bamboo wrapping (which was replaced once the batch reached maturity) and naturally aged in a slightly humid and well-ventilated environment. It is this period of approximately twenty years of post-fermentation in a controlled atmosphere that allowed the initial character of the fermentation to gain complexity and beautiful ripening notes to develop.

These bricks, weighing approximately 250g each, are wrapped in pairs in traditional bamboo packaging and were aged in this packaging. They were inspected a few years ago, at which time the packaging was replaced with new bamboo.

Tasting:

Notes: A fine old-style shu cha, of a type no longer produced today, with well-developed ripening notes. Its character is reminiscent of a mid-2000s Menghai Tea Factory 7572. The liquor is oily without being heavy. The aromas are dominated by warm patinated wood and incense, complemented by notes of nuts, liquorice, and vanilla.

We recommend preparing it with a gaiwan, shiboridashi, small teapot or similar: Pour approximately 3 to 5 g of tea into 100 to 150 ml of hot water at 100 °C
